溏心蛋, Marinated Soft Boiled Eggs

Don't you just love those eggs which served with the ramen in some ramen restaurant or Japanese culinary place?

Heh, so I did this :) Marinated soft boiled eggs. It's called 溏心蛋.

The egg whites are in solid form but the egg yolk are semi-cooked.
So it won't taste too dry like the hard boiled egg.

So I did a little mess in the kitchen and viola!
This is my version, wasn't too bad right? heh.


To make this 溏心蛋, first you have to prepare you marinate sauce, and that's depends on your preference.
Like me, I use 5 tablespoon barbecue sauce + 2 teaspoon of salt + 3 teaspoon sugar and water above the eggs level.

Or you can buy the sauce from the market, it's called "卤水" or "卤汁". I heard Lee Kum Kee got the good ones.



To cook the soft boiled egg:

1. 2 eggs from the fridge (not room temperature)
2. Wash the eggs and pot in a small pot
3. Pour in water. Water level - Just covered the eggs
4. Boil for 10 minutes with high temperature. (by 7minutes your water should be boiled)
5. Prepare your sauce.
6. Immediately soak the eggs in the ICE WATER.
7.  Crack the shell and peel it off. Soak in the sauce put in fridge for overnight.
8. Cut your egg into half with sharp knife. Nom. You got your eggs ready! :D
